These Banana Buckwheat Carrot Muffins are moist, tasty and packed full of nutrition from the heaps of wonderful ingredients.

These are the perfect little winter snack to add to the kids lunch boxes and make them the envy of the playground. Or great along side an afternoon cuppa with friends. They're spicy, they're saucy, they're gluten free, they're vegan, and we couldn't pass up another opportunity to include our healthful Medicinal Mushroom Complex in this recipe for an extra punch of goodness.

Betacarotene (carrots)
The body turns betacarotene into vitamin A which is really important for eye and skin health among other things.
Potassium (bananas)
Allows your nerves to respond to stimulation and muscles to contract (tighten), including those in your heart.
Cinnamon
A powerhouse of a spice, suggested to be anti-oxidant, anti-inflammatory, anti-diabetic, anti-microbial, anti-cancer (to name but a few).
Apples
It has long been said that an apple a day keeps the doctor away, well, a 2016 study has collated a number of studies and suggested that an apple a day may infact help the immune system. Another 2015 study is also suggesting that Apples may help Cardio Vascular Disease (CVD).
Immunomodulation (mushroom complex)
strengthening, balancing, supporting and regulating the immune system, optimising immune response (great for winter).
Adaptogen (mushroom complex)
helping the body adapt to stress.
Reishi (Reishi)
1 of the ingredients in the Medicinal Mushroom Complex, known historically as the Mushroom of Immortality, Reishi's compounds have been shown to provide good all around calming and relaxing effects as well as supporting the immune system.
Chaga (Chaga)
1 of the ingredients in the Medicinal Mushroom Complex, Chaga is packed with anti-oxidants with studies suggesting its compounds have the capacity to provide support for the immune system and its ability to modulate it.
Cordyceps (Cordyceps)
1 of the ingredients in the Medicinal Mushroom Complex, Cordyceps has been used for cognitive and athletic performance along with it's possible immunomodulatory effects.
