These Coconut flour cookies are super simple and quick, when you're looking to whip up a little 'healthy' something for your small people — taking less than 10mins to mix and around 15mins to bake.
We're sure, like us, you've had those moments in the kitchen with Coconut Flour where you end up with a congealed mess that doesn't bind or look remotely like what you were wanting to prepare. So if you have some Coconut Flour in the cupboard that you keep looking at wondering what you'll 'ever' use it for, and pretty much any kitchens staples, then this recipe is the one for you.
We have used hazelnuts, but you can add whichever nuts you have in the cupboard, or anything you like, we sometimes switch out the Maca for Yacon Coated Cacao Nibs. Because they do have Maca in them, we advise against combining Cacao with the Maca, this is because; recent research suggests that Maca prevents the absorption of the 'bliss' chemical in the Cacao (anandamide), and although that's just one compound found in Cacao, we choose not to combine these 2 ingredients due to multiple studies showing that the best effects of Cacao are attained due to Cacaos compounds working with each-other synergistically in the body, aiding bioactivity (absorption) - NOTE: this is our preference, you can by all means combine these 2 ingredients if this is your preference.
